Sisig-a divine hash made by deep-frying pork to a crisp, chopping it up into fragments, and tossing with citrus juice, ginger, diced onion and peppers-is the dish to get, but Ellen also does a fine adobo, overstuffed siopaos, crispy lumpia shanghai, and menudo, which is a tomatoey pork and potato stew with no resemblance to the Mexican tripe soup.
