Burritos La Palma is a Mexican restaurant in Santa Ana. There are six different burritos in all, but the specialty of the house is birria de res, a spicy, brick-red stew traditionally made with shredded goat meat. Birria is just about the most iconic dish of Jerez, Zacatecas, from where owner Albert Bañuelos’ parents hail. Here, Bañuelos uses beef instead, simmered until it’s dripping with home-cooked sumptuousness. There’s also deshebrada, shredded beef in a green chile sauce, and a shredded chicken tinga that’s mixed with potato. All are wrapped in a tortilla that has a chewiness like the doughy insides of a just-baked croissant and the delicateness of a crepe. They’re never dry, never mealy, and when they’re wrapped around Bañuelos’ wet fillings and seared on the griddle slightly to seal, they create a burrito that has no equal.
