    ABC Indomart is an Indonesian grocery store in Fullerton. It's a tiny place, just three aisles of groceries, a big freezer in the back and a smaller cooler in the front. The only décor is in the front window, which rotates posters of whatever concerts or festivals are upcoming (usually in Duarte). But this is where non-Indonesians can get a quick primer on how one of the most fabulous cuisines on Earth gets constructed. There are shelves, for instance, of seasonings offered by Munik, the McCormick’s of Indonesia. Other aisles feature noodles, make-your-own-tempeh kits, even a couple of Dutch items thrown in to give respect to the archipelago’s former colonial masters.     Aria International Supermarket is huge--airplane hangar huge. Even after the market moved into the space previously occupied by Sears Home Essentials, there is still literally enough space for a fleet of Escalades that could all fit between the aisles. The produce selection is eclectic and seasonal, as it should be. You are just as likely to find Boar's Head meat in your sandwich as you are a great deal on a rice and koobideh meal. The former is served at a full service deli that boasts more cheeses than at the Trader Joe's. The latter is served at a food court that might as well be three football fields away at the opposite corner of the store. This compact little supermarket in what is perhaps the busiest shopping center in Irvine is the shining example of how to run a Korean grocery. The vegetables alone prove that it's the supermarket you want to go to: they're cheap and farm fresh, two previously mutually exclusive things. The fish department is immaculate, not smelling of actual fish. If you want to cook Korean BBQ at home, shabu shabu, or a stew, this is the place to get your ingredients. Here, small-batch food makers rent commercial kitchen space (along with tools, consulting, even walk-in fridges) in order to legally prepare their goodies. The scene was out of 19th-century small-town America: butchers breaking down cuts just a couple of tables down from bakers who were sharing their latest creations with the hot sauce guy. From here, the food crafters take their products to other places, with the hope that one day they can leave this wonderful training camp and have a space of their own. Here, the public can buy a good selection of products made at the Hood Kitchen, as well as see people in action through a couple of windows. The wares available are always in rotation (a more permanent selection is online) but can range from delightful Sola Jams to the tasty crystals of the Laguna Co. to the surprisingly tasty Heidi’s Salsa to the adventurous Pernicious Pickling Co.
