But on any given night, this place is hopping with sports fans and imbibers. Monday through Thursday 11 a.m. to 7 p.m., the bar serves $3 domestic pints, well drinks and shots. The room is simply configured: a bar, several cocktail tables in front of that, all the seats perfect for catching the game.     626-792-4441 Pairing fine wines with some of this town's best jazz musicians, Red White + Bluezz is a classy oasis of cool in Pasadena, and a key part of the city's ongoing nightlife renaissance. In-house sommeliers have assembled an astonishingly extensive wine list, with literally dozens of European and California wines, ranging from sparkling wines and "true" champagnes to old-world whites and new-world Bordeaux and Zinfandels. Wine is such a big deal here that the bar hosts regular classes and wine-tasting events. The menu starts with such appetizers as crab cakes and fried macaroni & cheese and continues with full courses like steak, lamb chops, ribs and lobster fettucine. The live entertainment is anything but background music, with regular gigs by local jazz stalwarts like Joe Lo Piccolo, Peter Smith, Doug MacDonald, Louis Van Taylor and Diane Hubka. The daily performances often include up to three sets per night. There is no cover, but reservations are recommended, especially for diners who want to sit near the stage.     Rocks in Laguna Niguel is nestled in an industrial office park next to a bakery that supplies cookie dough for local elementary-school fund-raisers, Rocks draws a fuck-it-all crowd looking for a night it'll hardly remember. It's a dimly lit, black-walled, many-mirrored adult playground: There's shuffleboard, darts, a wide dance floor, raging karaoke and, most crucially, $2 drink deals on Thursdays. And they have a great house band: while banging their heads behind sprawling waves of cascading hair, guitarists Justin Suitor and Jeff Lyman pluck out a nimble interplay of classic-rock-era riffage in the vein of AC/DC mixed with psychedelic, reverb-laden ambiance. While their songs sound great on an iPod, their live shows are the main event: Witness Suitor abandoning the stage to howl amongst the metal monkeys in the pit.     949-766-6939 Rose Canyon Cantina is a bar in Trabuco Canyon. If you've never had a real margarita, this will strike you as wildly unbalanced and sour; it's supposed to be. You're supposed to get a hit of sweetness from the Cointreau, a punch between the eyeballs from the tequila blanco, and a mouthful of sour to help it down, and this delivers. It isn't perfect--it isn't shaken, it's got a lot of swiftly-melting shell ice in it, and it's twice the size it should be--but you know what, one of those and an order of surprisingly good ceviche, and you're set for a lazy afternoon out in the last vestiges of rural Orange County.
