Located inside Costa Mesa's Mitsuwa Marketplace, Sanukiseimen Mugimaru offers a way to enjoy freshly made udon noodles. As you line up to order, you can actually see the noodles being cut from fat rolls of dough, and then boiled in large vats. There are more than a dozen styles—everything from straightforward kake to tonkatsu udon—plus an equal selection of tempura vegetables, as well as shrimp, fish cakes and even hard-boiled eggs.
