An Old Fashioned is traditionally just bitters, spirits, sugar and water—it doesn't necessarily specify which spirit. You can make Old Fashioneds out of rye, bourbon, Cognac, even mezcal, or you can go to 320 Main and order an Oude Fashioned, which is made with genever, a wildly funky cross between gin and whiskey. And after two or three, you might even be able to pronounce it.
